Can someone explain why, if we had negotiated a summer more for Dahl, and we were close to finalising term, he signed an extension to his current contract on Thursday? It's not typical behaviour.

The contract extension was known for weeks.
It is normal behavior when the player chooses to sign a new deal that cancels out a buy out clause that would have seen him leave for less than his market value in the summer.

Firstly, the link with us is just a rumour. However, players sign extensions when other clubs are reportedly interested for a variety of reasons: to ensure game time and development, more money for them, or to ensure his current club get a larger fee.
Recently, Jeremy Jacquet signed a new deal in May for Rennes until 2029 to guarantee his development and first team football, even though he knew several top clubs were looking at him.
Liverpool signed him and let him stay there, I imagine, to stop other teams signing him in the summer.
Perhaps JHD has told us, if the rumour is true, that he will sign. He has given a gentleman's agreement, and that included him signing a new contract. Truth is, no-one really know, or those who do aren't putting that detail out there as it would be a confidence.
So, it happens more often than you think, possibly.
